Legend dictates that sparkling wine has been being made in Champagne since 1692, when Dom Perignon made it by accident. In fact, most historians agree that, that date is much more likely to be 1531, without the aid of monsieur Perignon. Regardless, Champagne is a region that is more renowned than Batman, Superman and the skull of Yorick combined. Alas, poor Batman! I knew him Horatio. In fact, it might be too well known; for people do tend to announce that they brought Champagne, while waving about a bottle of Italian sparkling. It’s probably unnecessary; you seem sharp as a whip, but let’s just quantify what we mean by good old Champagne. It must be grown in the French Region of Champagne, bottle fermented and aged on the lees (dead yeast) for at least 12 months. So, you won’t find anything that doesn’t meet those criteria on this page, that’s good, ay?
