    The story goes that in 1930 the director of the then famous Paris restaurant 'la Samaritaine de Luxe' challenged Victor Besserat to produce a champagne that could be drunk throughout a meal. Victor created his Cuvée des Moines, and duly won the bet, and the contract.

    2008 was a mixed year in Europe. The Bank of England was forced to bail out Northern Rock, marking the start of a few monetary ‘issues’; Lily Allen introduced acerbic wit into an otherwise predictable pop chart; and the busy bees at Champagne Ayala produced the gorgeous Blanc de Blancs Champagne you see before you. With laser-precision fruit and low ‘dosage’ (added sugar solution), even after six years ageing in Ayala’s cellars, it maintains the Chardonnay grape’s lemon freshness, spring blossom and beautiful levity.

In fact it’s questionable that the twenties would have roared at all without Ayala, as it was so popular it even became the official supplier to the royal courts of England. Us Brits adored its drier House style and it remains known today throughout the world for its fresh and elegant wines, like Brut Majeur, which combines delicate minerality with precision of fruit and a charmingly long finish.
