‘Less is more’, the saying goes. But we’re not so sure. Is one scoop really better than two? Would we rather a two day weekend or a three? The answer always seems to suggest that ‘more is more’. But then this little number came along and it all made sense!


Jolivet and his team have really mastered the art of 'less is more', with minimal intervention wine making, focusing simply on the purity of the grape, unique nuances from the terroir and allowing natures vibrancy to take centre stage.


But then, once you’ve tried its delicate aromas of lime, green apple, kiwi fruit and some vegetal notes, you might end up asking yourself, is one glass really better then two?

Pascal Jolivet was founded in 1987 and is one of the most dynamic domaines in France’s Loire Valley. Based in Sancerre, the domaine now owns 70 hectares of vineyards spread across the appellations of Sancerre and Pouilly Fumé. The domaine supplements the estate holdings with additional fruit sourced from long-term contract growers some of the prime sites of the region including ‘Les Caillotes’, ‘Le Chêne Marchand’ and ‘Le Clos du Roy’.

Pascal shares his philosophy with winemaker, Valentina Buoso: to work in harmony with nature to produce wines with purity of fruit, a linear character and minerality, allowing a natural expression of the vineyard to give the wines a sense of place.

The grapes used in in Pascal Jolivet's Sauvignon Blanc are sourced from two regions of Touraine: Chemery which is known for it's limestone soils and Anger sur Cher known for it's flint and sandy soil bases. The terroir is of great importance in the production of this Sauvignon Blanc and is it's unique expressions are carefully preserved from the vineyard to cellar resulting in wines with noteable purity, finesse and elegance.

Made from 100% Sauvignon Blanc, the grapes are gently pressed to preserve delicate fruit flavours. The juice is then fermented in stainless steel using only natural yeasts, at low temperaturs again to preserve the aromatic compounds of the grapes. After fermentation, the wine spends a further two months maturing on its lees, gaining texture and complexity before bottling. This wine burst with fresh vibrant flavours of green apple, zesty grapefruit and kiwi, delicately laced with stony mineral tones and a fresh lingering finish.
