The Scribbler Cabernet Shiraz

Tasting Notes : Yalumba 'The Scribbler' is a wine with excellent depth of colour, richness and complexity, displaying an aroma of riper style Barossa Cabernet Shiraz.It shows dark plum fruits, black cherry, dark tobacco and hints of leafiness all with the dark undertones of mocha oak. It is a well-structured wine with a full and robust palate, displaying the classic red berry fruit flavour of Cabernet Sauvignon and the sweet mid-palate of Shiraz. 'The Scribbler' finishes with tannins that have a black olive and red spice tone. This wine is perfect to enjoy now, but will certainly cellar over the next 5-10 years.

Method of Production : Cabernet and Shiraz are kept as separate batches. Batches receive either a pre-ferment soaking of 1-2 days or post-ferment maceration of about 7 days.The standard time on skins is 9-10 days but some batches may receive up to 16-17 days on skins. Usual to receive 1-2 day's pre-ferment maceration before yeasting. Looking for an initial 25°C, and then maintaining the ferment at about 20°C. Small batches are racked in and out of oak, larger batches are centrifuged. Minimal coarse grade filtration prior to bottling.No stabilization required. Cabernet up to 35 yr old, Shiraz from 5yr to 80 yr old. Vineyards located within the Barossa and Eden Valleys. Cabernet mainly SA125, Shiraz mainly 1654 (young vine) and unknown (old vine) yieldsgenerally between 2-4 ton per acre.
