Instead of applying artificial pesticides to rid the vines of wee beasties, the winery use pheromones to control the insect population. Casa de le Ermita use these natural chemicals to attract either males or females and disrupt their mating patterns.

Tasting Notes : Intense aromas of raspberries, black pepper, violets and blackberries fill the nose. Powerful and full-bodied, the wine has a great structure and a persistent, fruit-filled finish.

Method of Production : Hand-picked from old vines growing in poor quality soils (not good for roses, but excellent for vines!) the grapes were destemmed and transferred to stainless steel tanks. The tanks were half-filled to facilitate fermentation using natural yeasts. After around 2 weeks, the wine was pressed from the skins, went through malolactic fermentation then was racked from the lees. It was filtered and fined before bottling.

Peppery berry notes

Peppery berry notes on the nose with a full explosion in the mouth. Big bold and not ego with the weather we are hoping is around but always good with sausage
