This Shiraz has had just a soupcon of Viognier added to the crush. This Côte-Rôtie emulating method is all the rage in Australia at the moment, but what makes this delicious wine that bit different from the masses is the cool climate Adelaide Hills fruit. Fresh and moreish, with good aromatic notes, this is the gentler side of Australian Shiraz.

Tasting Notes : The nose is all raspberry coulis, liquorice, and white pepper aromas. The palate is medium to full-bodied with cherry and blackberry flavours finished off with soft tannins.

Method of Production : The estate-grown grapes were destemmed crushed and cold macerated for two days prior to being cofermented in stainless steel tanks. After a further three days of postfermentation maceration and malolactic conversion, the wine was allowed to age in tank for six months, fined, filtered then bottled.
