Katnook Estate Prodigy Shiraz 2003

In the words of the winemaker, the Prodigy is 'a seamless marriage of rich, intense fruit and spicy, chocolatey oak with a palate that can only be described as luxurious.' Iconic stuff from an area, Coonawarra, more usually renowned for its Cabernet Sauvignon.
Tasting Notes : Hugely intense; aromas and flavours of white pepper, raspberry, mocha, plum and vanilla with a long, complex finish.
Producer : Katnook Estate
Method of Production : Sourced from young vines, the grapes were destemmed, cold-macerated for 1-2 days then transferred to 'potter' fermenters. Vinification took place at between 20-25°C, with a short period at 30°C for an extra colour and tannin boost. The wine went through malolactic fermentation and was racked into an even mixture of French and American oak barrels for 29 months ageing. The Shiraz was not fined but was gently filtered before bottling.
