Using only an extract from grape fruit seeds and mineral oil in the vineyard, the fruit that makes this wine is in the process of gaining organic status. As with anything Alvaro Espinoza touches (Cucâo is a side project of his with Geowines) not only does this wine let your eco-conscience sleep well at night, but it also tastes damn fine too! Value for money doesn't get much better than this.

Tasting Notes : Elegant and restrained on the nose with citrus and mineral aromas, plus a hint of butterscotch. Medium-bodied and fresh on the palate with a long finish.

Producer : Cucâo

Method of Production : Handpicked estate-grown grapes were partially crushed and partially whole bunch pressed (40:60 ratio), with the resulting juice cold settled. Fermentation occurred half in temperature controlled stainless steel tanks and half in French oak barrels (20% new), over a period of ten days. The wine was aged on its lees, with regular battonage, for ten months in the same oak barrels - the tank portion was kept in tank, with the two being blended together. The final cuvée was fined, filtered and bottled.
