Tasting Notes : Classic Heathcote Shiraz, showing dark berries, chocolate, leather and some tarry liquorice-like barrel ferment characters. A full fleshy palate giving depth and concentration of fruit.

Method of Production : The grapes were destemmed, crushed and cold soaked for four days. Fermentation predominantly occurred in stainless steel temperature controlled tanks for nine days, with 10% then run off to finish fermentation in new American oak hogsheads. After malolactic conversion, the wine was allowed to mature on its lees for 18 months in 1, 2 and 3 year old barriques and hogsheads; half of which were French, and half American. The wine was gently filtered, but not fined prior to bottling, and a further 18 months to two years of bottle ageing before release.
