De Bortoli Shiraz Cabernet Sauvignon

Tasting Notes : Vibrant purple, deep crimson colour. Aromas of blackberry and spice. Fresh blackberry fruit and toasty vanillin oak. Soft round tannins with good length.

Method of Production : The vines for this fruit has an average age of 8-14 years, majority is single trellis with either drip or flood irrigation. Fruit is destemmed andcrushed into tank where fermentation takes 4-6 days. Juice is pumped over the skins twice a day to extract flavour and colour. The wine is then pressed and allowed to undergo MLF. Some parcels are transferred onto staves during MLF and are given micro-oxygenation treatment to soften the tannins and assist in integrating the oak. Egg White is used in the fining process.
