Winemaker Tony Rasselet works with the Marne Valley Co-operative, producing fresh, clean and fruity wines which develop nutty, biscuity complexity with age. Blin convincingly dispels the myth that Co-ops can't make good quality Champagne.
Tasting Notes : Generous flavour, divine complexity with nutty, toastiness over fresh citrus fruit. The finish is clean, complex and long.

Method of Production : Blin's growers use the 'lutte raisonnee' (rational struggle), a scheme reducing chemical use in viticulture. The hand-picked grapes were gently pressed and the juice settled until clear. Fermentation took place in stainless steel tanks at 17°C. The wine was blended and bottled with yeast and sugar to undergo secondary fermentation. Three years ageing with lees in bottle added rich biscuity notes.
