Wallace is a wine greater than the sum of its parts - a fusion of Shiraz and Grenache from the famed Ebeneezer vineyard of the Barossa Valley. In what is is rapidly becoming the Glaetzer hosuse style this wine shows great balance between forward frutiness, elegance and finesse.
Tasting Notes : 'A spectacular value from highly renowned winemaker Ben Glaetzer, the 2004 Shiraz/Grenache Wallace (70% Shiraz from 65-year-old vines and 30% Grenache from 90-year-old bush vines) was aged 12 months in neutral 300 liter barrels, primarily American. An expressive nose of ground pepper, sweet cherries, raspberries, currants, and loamy soil scents is followed by a wine of great intensity, power, elegance, and definition. Method of Production : Up to six separate parcels were fermented separately in two tonne open stainless steel fermenters. The Shiraz components were fermented cool and received seven to ten days on skins, hand plunged three times daily, whilst the Grenache received a warmer ferment to extract colour and tannin structure, and was hand plunged twice daily. The wines were pressed to two and three year old oak (15% French and 85% American) for malolactic fermentation before being topped for 12 months' barrel maturation.
