Japan's legendary Suntory Yamazaki Single Malt Whisky is the masterpieace of fresh air, pure water, and four simple ingredients: the finest malted barley, water, special yeast strains, and noble oak casks. In 1923, Shinjiro Torii, the founder of Suntory and the father of Japanese whisky, build Japan's first malt whisky distillery in the Vale of Yamazaki. Using copper pots stills, the Yamazaki distillery was the first of its kind outside of Scotland. The distillery's location on the outskirts of Japan's ancient capital of Kyoto offered pure waters, diversity of climate and high humidity, the ideal environment for the maturation of good whisky. Today, Suntory Yamazaki is the most popular whisky in Japan, it is enjoyed by whisky connoisseurs the world over, and it exported in over 25 countries..

Tasting Notes : Medium-bodied whisky with aromas of dried fruits and honey. It has a delicate, mellow taste with a lingering, woody and dry finish. 'For whisky noses joining-in the revelry, aficionados consider Yamazaki equal to Scottish single malts. Founded in 1924, Yamazaki produce a huge range of styles, and I recommend their 12-Year-Old single malt for a taste of Japanese wizardry. Method of Production : Suntory Yamazaki 12yo is aged in casks of three different kinds of oaks: American , Spanish and Japanese. This gives Suntory malt whisky its unique quality. Heated malted barley is converted into fermentable sugars; the resulting liquid is called wort, and is converted into an alcoholic liquid called wash, which is distilled twice in copper pots. Copper is an excellent heat conductor. It reacts favorably with alcohol vapors and makes for a superiod whisky. Only the distinctive middle cut of the second distillation is collected to become Yamazaki whisky. After the distillation process is complete, the new spirits are emptied into oak casks for the long process of maturation. The whisky matures to its amber color and smooth taste.
