Modern, thermo-regulated concrete vats allow cool maceration prior to fermentation.Two weeks of cuvaison follows alcoholic fermentation and malolactic fermentation completed in the vats. Twelve months of aging in barrels (30% new wood). Fining with egg white prior to bottling. Natural cork closure.
