This characterful expression of Rémy Martin VSOP comes from the finishing period of the eaux-de-vie that takes place after the final blend, at the end of the ageing process.
Over a year, the eaux-de-vie are stored exclusively in mature Limousin oak casks that are over 20 years old, which enhances their fruity notes: this is what is called the Mature Cask Finish.
Being aged in mature casks doesn’t – counterintuitively – lead to a more mature taste, but rather a more fruity, pure expression, as the older casks don’t impart flavours as much as fresh ones.
Alter Ego: Miss Marple; straight as an arrow with a real understanding of characters and what they are capable of. Smells like a rose garden and is wonderfully fruity, incredibly sweet and not to be underestimated.
