Jean-Marie, Raymond, Jean-Christophe, Lionel, Arnaud Bourgeois are all working together for the winery. Everyone is on site.
What pets does the winery have?
Two dogs: Vickie and Shaka.
What is your favourite and least favourite part of the wine making process?
Favourite part: the start of fermentation because this is the start of the process and the creation of the future wine(s).
Least favourite part: the end of fermentation because it can shows discrepancies in the accomplishment and can affect the aromatic profile of the wine(s).
Do you use any quirky techniques?
Every year, some plots are always fermented in the same tanks.
Have you always made wine? What would you do if you didn't make wine?
Yes. There was 10 generations of winemakers from father to son. We are the 11th generation!
What is your favourite grape to work with and why?
Sauvignon Blanc because this is grape variety is particularly infuenced by nature and the soils, and it expresses with great differences the terroir(s) where it is grown.
What's the best wine you've ever tasted?
It is as difficult to tell as to give the first name of the most loved girl in one's youth.
What is the best music to make wine to?
It depends of the period in the process. Classical and dynamic music for fermentation, more contemporary and with rhythm for bottling.
