    We can thank the existence of this Portuguese sweetie to a very happy accident of history. Way back when, when merchants shipped their wares in wooden ships, the wine in the hold would often overheat, resulting in a delicious, caramelised wine.

    Winemakers have sought to recreate this effect by baking the wine ever since - and now Blandy's have perfected the technique. This Madeira, made with the more unusual Tinta Negra Mole, is toffeed, ripe and nutty Madeira, with ample sweetness and a clean, tart finish. A most serendipitous wine indeed.

    Sometimes we really wonder how certain winemaking techniques were arrived at. Sherry making techniques in particular.

    After fortifying the wine to halt the alcoholic fermentation and keep it sweet (fair enough), someone must have then thought, 'what if we let it sit in a wooden tub for, maybe, five, no no... ten, sod it make that thirty years. Yup, then let's see what it tastes like then'.

    Well, these bonkers Andalusians, whoever they are, were obviously geniuses with much acumen, as this is precisely the way to produce moreish, almost umami-tasting Amontillado like this.

    The 30 years in American oak casks has transformed the humble Palomino grape into an unctuous, vanilla, cedar and fig-flavour bonanza of a Sherry. Three cheers for the vinous vanguard!

    Rather brilliantly, Antonio Flores, the Master Blender at Gonzales Byass since 1980, was conceived in the room above the Tio Pepe cellar in Jerez.

    A very young Amontillado that has experienced both biological and oxidative ageing. Dry on the palate and there are also hints of the oak with a salty finish.

With figs, prunes and mesmeric caramel depths from its two years in oak barrels, this is a real delight and, at a bargainous £6.50, it is so much cheaper than a holiday.

    Drinking port can be like opening up those tradional, wooden russian dolls. As you open each doll you reveal another one, another style of port. The first one is like trying basic ruby port-ok not bad, then the next you discover LBV port- which is much better.

    After some generous soul gives you a glass of single vintage port-it's brilliant and you think you have hit the last doll. But then you discover there is one more. The last one.

    A fine tawny port. Silky butterscotch, dried fruits and nutty flavours- completely new flavours compared to the previous ones. You really can't get any further than that.
