'This porridge is too hot!'... 'This porridge is too cold!'... 'This porridge is just right.' So said Goldilocks, before being quite rightly evicted by three disgruntled homeowners...

Luckily for them she hadn't found their bottle of Barbadillo Amontadillo Sherry! We can't imagine she would have been so quick to find faults with this ones deep amber colour, complex aromas and dried fruit flavours. Mmm...this sounds just right to us!

We have some riddles for you.

"Voiceless it cries, wingless flutters; toothless it bites, mouthless mutters." What is it? The wind.

"It's salty but pleasant, dry but refreshing, small but mighty." What is it? Solear Manzanilla by Antonio Barbadillo of course!

Yes, don't be fooled by its size, there is a whole lotta dry, nutty, sea-salty goodness in this wee bottle. One to watch Almovodar films and pick at olives with.

Good Madeira wine can be quite hard to find. They just don't make that much of the stuff, unfortunately. Take the forgotten Madeiran noble grape Bastardo, how much do you reckon the whole island produced in 2010? It's pretty low, what you reckon 2000 bottles? 1500 bottles? Nope, 4.5 litres... 4.5 litres! So, if someone tries to sell you a case of 2010 Bastardo you can be confident they're trying to rip you off. Thankfully there's a bit more Boal, so we can all get our hands on this delicious medium-sweet wine with notes of raisined fruit, butterscotch and vanilla. That being said, there are only 133 acres Boal plantings on the whole island, that's like a medium sized Bordeaux grower, so if you find any good quality Madeira, we recommend you get it home as fast as possible!

The history of the island of Madeira is fascinating. In 1419 Madeira was discovered in the name of Portuguese Price, Henry the Navigator. Despite being dubbed the Navigator, unsurprisingly he stayed in Lisbon sipping on a White Port & Tonic, while he got two other chumps to sail around the coast of Africa. Legend dictates the Portuguese started a fire to clear some space in Funchal and the fires burned for 7 years & that's why the soil is so nutritious. That sounds apocryphal to us, we can't even keep a log burner going and we have matches, fire-lighters and rolled up copies of The Telegraph. Nonetheless, the soil is certainly well nourished and contributes to this astonishing wine, expressing a fresh and fragrant bouquet of dried fruits and spice with luxurious warm orangey aromas. Medium dry and full- bodied. Concentrated and fresh with a pleasant zesty bittersweet edge from a finally balanced acidity. Long lingering aftertaste of exotic fruits with spicy overtones.

Like something conceived in an Anne Rice novel this elegant Vermouth is a mystery that beckons to be unveiled. A concoction of Oloroso and PX sherries blended with botanicals of wormwood, clove cinnamon, nutmeg, angelica root and cinchona bark.

Poured into cut-glass and served chilled in the heat of the colonial riverside in New Orleans or in the dead of night in a 19th-century Parisian theatre. A secret whispered in the rolling silence of a boat belly. That becomes a welcome drink offered when arriving after a dusty carriage ride after a day's journey.

This sparkler is a curious and wonderful thing. It is made using an ancient 'Rural' Method in which, unusually, the wine only undergoes fermentation once, using only naturally occurring sugars.

If you are slightly bored and confused by this and care not for the methods used, let us tell you that it is made by Luis Pato, the Baron of the Bairrada and one of the most renowned producers in Portugal, who calls it his 'take on Prosecco'.

If you're now muttering 'meh' at your screen because you don't give a monkeys about famous producers, let us simply say that it is an elegant and focused wine with generous mousse and aromas of white flowers and citrus. Does that do it?

Tawny. In the avian world, it refers to a beautiful, golden-coloured owl that is, in fact highly territorial and non-migratory.

Offley Tawny Port is an elegant fortified wine, offering mature and fresh flavours with a classic style. A typical drink that combines modern techniques with years of experience.

Sometimes you just want to turn the radio on and let somebody else make your mind up for you. You've made mind-bending decisions all day, you don't want to come home and choose between Stockhausen and Ornette Coleman. Just press a button and dig what comes out, you'll like it more than you expected.

Like this wine, it's smooth, fruity and friendly, and it doesn't want you to beat yourself up looking for a greater profundity. There you go, 'don't let the sound of your own wheels drive you crazy...' Perfect. You didn't even know the Eagles were so good. Everything is splendid.

It's a happy little chappy is this wine. Like a gregarious mate, you can take it anywhere and it's guaranteed to quickly raise a smile with its easy charm and its bright, sunny character, full of the blissful Californian sun. Its ripe yellow plum and cantaloupe melon flavours would buddy up easily with a spicy vegetable stir-fry, ideally with a bunch of old friends, a comfy sofa and a Shirley Valentine DVD.

Paola Medina Sheldon. The name might not sit at the front of your mind, although we're not sure if she's ever surfaced from her studies long enough to introduce herself.

She's the Head Winemaker at Williams and Humbert, a post she took up after obtaining separate degrees in Chemistry and Oenology, and Masters' degrees in Viticulture, Oenology and Legislation. Blimey, our Woodwork 'O' Level certificate can come off the wall now!

We think she's just about qualified to make this elegant, nutty and salt-tinged Manzanilla. And she'd more than likely be able to take you to the cleaners if you disagreed.
