The unique character of this wine comes from the combination of the "father" Sauvignon Blanc and the "child" Cabernet Sauvignon grapes, resulting in a perfect balance of flavors. The grapes were harvested and fermented separately, with the Sauvignon Blanc undergoing fermentation at low temperatures of 15°C and then left on the lees for a year with periodic batonnage. The Cabernet Sauvignon was fermented separately and kept in a stainless steel tank for a year before blending.
