If there is one thing we learnt from Star Wars it’s if you want to become a master you have to train with the best. Well that and don’t design a giant exposed vent right over your Death Star's core reactor.
Chilean winemaker Pascal Marty definitely took this lesson on board, the one about learning from the best not the tips on space architecture. He studied at the Oenology Institute of Bordeaux (the home of Cabernet), before becoming an Oenologist for Baron Philippe de Rothschild S.A. (masters of Cabernet) where he worked for more than 14 years. In California, Pascal became a key technical member of the Opus One team (where he helped produce one of the finest Cabernets in the world). Now that Pascal makes his own Cabernet in the Colchagua Valley, we expected big things, sipping this wine with its powerful palate of ripe red currants, blackberries, prunes, cassis, and menthol profile, complemented with cloves, cigar box, and vanilla notes it’s fair to say, the force is strong with this one.
