Barbadillo Pale Cream Sherry

With the light fluffiness of a cloud, combined with the delicate, mesmeric nuances of almonds and freshly baked baguettes, this is a little dream of a Sherry. Hints of coconut enter the gentle fray, from the American oak used in the Solera ageing casks.

We're not trying to psychically drive you or anything (we've been watching too much pseudo-psychoanalytical TV, clearly), but were you to serve up a desert of homemade crème brülée, this would go really rather well.

Antonio Barbadillo is a long-established, family-run enterprise located in Jerez Superior and has over 500 hectares of vines. They use state-of-the-art winemaking facilities combined with ancient barrel halls that store 35 million litres of maturing Sherries. The vineyards of Gibalbín and Santa Lucía are embedded on albariza, a permeable, pale soil, predominantly well matched to the cultivation of vines grown for the manufacture of superior wines.

The climate is mild with further than 3,000 hours of sun softened by the cooling effect of the Atlantic. These influences, together with a extensive winemaking tradition, allow for superb ripening of the Palomino grapes and guarantee a high grade of beaumé (level of sweetness) and moderate acidity.

Originating from Fino Sherry, this has been sweetened to give a delicately flavoured wine moderately sweet aperitif. As with all sherries this is aged in the Solera system, in a series of American oak casks. Pale straw in colour with a delicate aroma of almonds and yeast. Smooth, sweet fresh and delicate tasting.
