We’ve been informed by Iberian meteorologists that “the rain in Spain falls mostly on the plain.” We know there’s some very esoteric language in there so for those of you not training to be a weather forecaster, we’ll break it down - In most of Spain, it is fairly dry.
This can be excellent news for grape growers as it is ideal for making wine under organic practices, while also, a little water stress can concentrate the grapes, leading to wonderfully expressive wine.
Just like this organic Rosé Cava; a fresh and clean sparkling with notes of ripe fruit that are met on the palate by wild fruits, above all strawberries and cherry along with a toasted, vanilla character. Its ageing grants it a long, balanced flow in the mouth with a fresh and lively finish.
