Like Cole Porter, Ira Gershwin and Duke Ellington, Champagne Ayala isn't such a household name these days but, dust off the family photo album and you'll find that it was all the rage in 1920s England. In fact it's questionable that the twenties would have roared at all without Ayala, as it was so popular it even became the official supplier to the royal courts of England. Us Brits adored its drier House style and it remains known today throughout the world for its fresh and elegant wines, like Brut Majeur, which combines delicate minerality with precision of fruit and a charmingly long finish.

 

AYALA is one of the best kept secrets of Champagne. With a history dating back to 1860, AYALA was one of the original Grandes Marques Champagne Houses and was awarded a Royal Warrant by Edward VII in 1908. The house became part of the Bollinger Family in 2005 and is located in the same grand cru village as Champagne Bollinger.

Chief winemaker Caroline Latrive is one of the rare female Chefs de Caves in the region. She brings a wealth of experience and for over a decade has crafted Chardonnay led, elegant wines known for their great aromatic freshness, silky texture and pure finish. Caroline ensures that the AYALA house style is mainated by focusing on quality rather than quantity.

AYALA has supported the AYALA SquareMeal Female Chef of the Year Award since 2018, an association that champions women who are masters of their craft in a male dominated industry while also celebrating the House’s reputation within the finest restaurants in the world.
