Winemaker Pascal Léon Verhaeghe is a man who fell back in love with wine, after inheriting his family's mixed-culture estate in Cahors. After an encounter with his friend Jean-Marie Guffens (who comes from Pascal's family's native Flanders, and who makes our Verget wines) he went off to do a degree in oenology and generally get skilled-up.
He came back to his family's vineyards and proceeded to work sympathetically with the land (the vineyards are certified organic) and has low yields and a large, attentive vineyard team.
Chaton du Cèdre is fantastically black, with liquorice, red cherry and leather notes, and a rounded palate. We're so glad he rediscovered his roots.
