People often say they shoot for perfection but is it not our seeming flaws that identify us and are the true expressions of our beauty? Like Marilyn Monroe’s birthmark or Alexander the Great’s heterochromia; whenever things were getting too much, his friends and family would stare in to his different coloured eyes and the imperfect beauty would help them forget about all the genocide and megalomania.

The same is true of the vineyards of the Rasova winery, although at first glance many might consider the soil too low-fertile, the rainfall too infrequent and the breezes off the Danube too cooling but it is these supposed flaws that define wines such as Imperfect Feteasca Alba. For it is this terroir that delivers the wines characteristic fruity intensity, of yellow apple and peach and razor sharp mineral finish.
Crama Rasorva is part of the new wave of Romanian winemaking, established in 2014, they have fully embraced modern techniques and equipment. The vineyard and wine cellar are located in Cernavoda, Constanţa. Situated in the proximity of the Black Sea, on the Eastern Bank of the Danube. The climate is tempered by these two bodies of water, while still receiving over 2100 hours of sunlight a year, helping to fully ripen the grapes while maintaining good acidity and aromatics.

Grapes are kept for 12 hours in a chilling room at 10 C and then manually sorted. Half undergo a soft pressing process and the other is left to macerate on the skins for 2 days and then softly pressed. Fermentation initially starts with selected yeasts at 16 C for 19 days.

At the end of the fermentation 30% of the wine is moved to age in new French oak barriques for 6 months with periodical batonnage. After that this wine is blended with the stainless-steel wine, stabilized and bottled.
