Imagine gliding over the Côte d'Or, taking off from the rooftops of Beaune and drifting over the undulations of Pommard, Volnay, Puligny-Montrachet and Santenay, dreamily contemplating the miracle of the topography beneath you and the world class wines it produces.


Thirsty work for sure, and what more fitting reward at the end of your flight than a glass of this ripe and perfumed Pinot Noir, produced by a part-time paraglider from a Côte d'Or-covering co-operative. Despite being vegan, it would certainly thank you if you'd grabbed a duck to go with it while you were up there!


Nuiton-Beaunoy is a winemaker's co-operative consisting of 260 members across 140 domaines in the Cote D'Or, the northern part of Burgundy which embraces the Cote de Beaune and the Cote de Nuit, and which is home to many of the region's most sought-after Appellations. It seeks to make wines that characterise the area's huge variety of climates and terroirs.


Sebastien Sauvageot was born in a small village near Beaune. He passed his "Diplome National Oenologue" in Beaune in 1995, and after working with with a renowned Burgundy negociant for six years, he returned to the Cave des Hautes Cotes in 2002. One might say he was Beaune to the bone. In his spare time, Sebastien enjoys a spot of paragliding.


The wine is made from grapes grown on 20-year-old vines, in clay and limestone soils with an east-facing aspect. Following hand-harvesting, the fruit is fermented in stainless steel and aged for 11 months in a variety of new and old French oak. No eggs or dairy products are used in the wine, which is suitable for vegans and vegetarians.


A lightly perfumed nose is backed up with ripe red fruits, leading to a medium-bodied palate blessed with rustic red fruits held up nicely with soft tannins. The wine would relish the company of duck and soft blue cheese.
