This elegant white wine keeps up its summery wonderfulness with lemon curd and citrus flavours which, when chilled, are perfect for enjoying when lazing in the sun.


For over 170 years, Penfolds vineyards have been located primarily in South Australia on land based throughout the state's most celebrated viticultural regions. Since they began, Penfolds have owned and leased vineyards as well as sourcing grapes for their wines from independent growers. Multi-vineyard and multi-regional sourcing is a tradition at the winery, introduced by Mary Penfold in the 1860's, enabling them to provide consistency of style and quality across their vintages.


Chief winemaker Peter Gago joined the team in 1989 after graduating as dux from his Bachelor of Applied Science (Oenology) at Roseworthy College, Adelaide. Initially he was in the craftsmanship of sparkling wines before he moved on to the making of reds, where he took on the role of Penfolds Red Wine Oenologist. With a natural understanding and passion for making wines, Peter swiftly became an important part of the team and in 2002 succeeded John Duval as Penfolds Chief Winemaker. He has often been celebrated for shining a light on the successes of Australian wines and received the 'Winemark's Winemaker' award in 2012, presented by the Institute of the Masters of Wine and UK publication, The Drinks Business.


Penfolds source their grapes from more than 220 vineyards and growers across Australia. The key viticultural regions they utilise include Adelaide, the Barossa Valley, the Clare Valley, Coonawarra, Limestone Coast and McLaren Vale. Despite South Australia providing the majority of their entire vintage crops, cooler climate regions such as Tumbarumba in New South Wales, Henty in Southern Victoria and Tasmania are used as important sources of fruits for their white wines.


They have worked with Chardonnay grapes from Tumbarumba since the early 1990s. The style of the Bin 311 typical supports a mineral acidity which is complemented by its barrel fermentation and maturation in seasoned oak barrels. Its elegant fruit flavours are preserved by employing minimal filtration.
