We're no ornithologists but we'd hazard a guess that the charming bird adorning the label is a blue tit, partly due to the colouring and partly because we're incredibly childish. However, Quinta de Aves' spirit animal could easily be an ocelot or another crepuscular animal as the vineyard hands at the estate have an affinity for the night.

Grapes are harvested nocturnally by hand, as the lower temperatures during picking allows greater retention of aromatics and acidity. This results in a Tempranillo with incredible freshness and purity of fruit, expressive of forest berries and violets with subtle oak characters of vanilla and liquorice. Turns the lights off and take a sip!

Quinta de Aves' history dates back to the 80's when its founder, Don Mauel Casada Casla, acquired the properly. After spending 25 years taking care of the soils and improving the quality of the vineyards, in 2006 the family made the decision to start elaborating and bottling their own wines under the Quinta de Aves name.
Night harvest in which the grapes pass from the vines to the selection table in a few minutes. After destemming, they maintain a high percentage of whole berries during fermentation, to achieve a high level of fruit intensity.
After filling into casks, they refrigerate the grapes to the suitable temperature for three days, obtaining high intensities of colour, aroma and flavour. At the beginning of the fermentation, they increase the temperature according to the needs, working the grapes to maintain the desired freshness. Once both fermentations are finished, and the stabilisation is carried out, they provide a touch of new oak wood.
