It would be fair to say that the Satori Valpolicella Ripasso is bursting with sartorial elegance! What, that means “of or pertaining to tailors or their trade,” really? Not a problem we can make this analogy work.

Just as tailors have to source the best materials, take measurements and bring them together to create the finest suit, so must Casa Vinivola Sartori select the ripest parcels of Corvina, Corvinone, Rondinella and Croatina, and blend them to create a perfectly balanced base wine. The fresh wine then goes through the unique “ripasso” process, wherein it is passed through the must of Amarone in February. This second maceration promotes extraction both of ripe tannins and of the rich dried-fruit aromatics of Amarone, which is like when a tailor… umm… dyes the material? The wine is then matured for 18-24months in oak, which is of course just like the sartorial process, as we all know a suit must be placed on an oak hanger for at least 2 years before it is ready to be worn… Stuck the landing!
Founded in 1898 Sartori are a powerhouse in Verona. There focus has always been on classic Italian winemaking, while also exploring modern vineyard and winery practices. They have recently moved to organic winemaking but are yet to be certified.

Vineyard selection of the best grape bunches. The grapes are subsequently pressed gently, followed by skin maceration at low temperature for 8-10 days. The fresh wine then goes through the unique “ripasso” process, wherein it is passed through the must of Amarone in February. This second maceration promotes the extraction both of tannins, which give this wine its longevity, and of the rich dried-fruit aromatics of Amarone. After malolactic fermentation, maturation takes place for between 18-24 months in medium and large-size oak casks. Finally, the wine is refined for at least 6 months in bottle prior to release.
