Our version is not only better because of strict adherence to the literal and a total disregard for rhyme schemes; most importantly it celebrates the las Palmas range by Gonzalez Byass. 4 sherries labelled Una to Cuatro shows the unfiltered progression of Fino to Amontillado. Una Palma is the youngest of the range; a Fino Sherry that has spent an average of 6 years in cask. The wine has intense aromas of sour dough, salted almonds and green apple. It's a must try for dry Sherry lovers, in many ways it embodies the immortal U2 lyrics, "yeah, yeah, yeah, yeah, yeah, yeah, yeah, yeah!"

Gonzalez Byass was founded in 1835 by Manuel Maria Gonzalez, with the first shipment of sherry to london in that first year. Nowadays the company is still run by the Gonzalez family, now in its 5th and 6th generation. They produce a wide range of fortified wines and also ship Champagne, sweet wine from all over Europe. Today, Tio Pepe is the most recognised and greatest selling Sherry in the world.

The Palmas range of sherries is a very limited release of aged wines. Bottled unfiltered and unclarified, the range shows a fascinating journey through the ages of the Tio Pepe solera and beyond. The wine for Una Palma was selected from rare casks which retained a delicate covering of flor despite being more than six years old. Bottled unfiltered and unclarified this wine is dominated by the aroma of the flor, accompanied by the nutty character of the Palomino variety. Powerful and extremely dry on the mouth with a salty and slightly bitter finish.
