Sometimes when we're drinking very fine Georgian wine, our eyes unfocus, we stare into the distance and a dream sequence begins of the tale of 'the hard-working squirrel and the lazy squirrel,' just like an after school special. You know the one, the lazy squirrel eats all his nuts in summer, while the hard-working squirrel buries loads to last him through winter... Spoiler, it doesn't go well for the lazy squirrel.



Traditional Georgian winemakers were inspired by the hard-working squirrel and asked themselves "why don't we bury our produce, to save for a rainy day?" They poured white wine into a large clay qvevri, buried them in the ground and let the wine ferment over winter. The result was a beautiful amber coloured wine with an aromatic rich nose of perfume, dried fruits and nuts. It turns out hard work doesn't just keep squirrels fed over winter, it also leads to delicious wine.


The vines are grown with respect for nature according to organic principles. They are fermented in the classic Georgian way in 2,000 litre "qvevri" made of local clay and buried in the ground. They represent the ancient tradition of Georgian wine making. The grapes are crushed and put into 1,800 litre "qvevri " where they are left to ferment spontaneously. They then remain on the skins for 6 months before bottling. They are unfined and unfiltered. Total cSO2 is about 60 mg/l.
