The winemaking team at Vita Vinea have a pretty hands-off approach to winemaking. They're just like parents from the 60s. They could've sent their child to military school when they only got a C on a geography exam, they might have taken up corporal punishment when they caught their child kissing a member of the opposite sex or they could've fined and filtered all flavour out of it when their child started to spontaneously ferment. They didn't though because wine is far more nuanced, just as a person is far more rounded when they are reared without overzealous restrictions.


Vita Vinea Saperavi is made naturally, in keeping with traditional Georgian winemaking, and the result is a highly complex red wine with flavours of rich ripe red and black fruits, built with a fresh, sour cherry note. The texture is rich and creamy and the tannins are very prominent, but in balance with the weight of the wine.


The vines are grown with respect for nature according to organic principles. They are fermented in the classic Georgian way in 2,000 litre "qvevri" made of local clay and buried in the ground. They represent the ancient tradition of Georgian wine making. The Saperavi vineyard produces yields of 6,000 kg per hectare. The wines are 30 years old. The grapes are crushed and put into 2,000 litre "qvevri" which are buried into the ground. There is a manual punch down of the cap four times a day during fermentation. After fermentation the wines are left for 6 weeks before racking and then returning to the "qvevri" There is no addition of yeast or SOS until bottling which takes place without fining or filtration.
