Weingut Wageck Sauvignon Blanc Tertiar 2016
£13.50
German Sauvignon? How does that work? Well, it starts off in your vineyard, going for the purest fruit. Then they pick it by hand, and sort the best of it by hand as well. No, a different hand, you muppet! Then they're allowed to stand for a day - the grapes, not the hands.
Are you listening to me? - before fermenting some of them in stainless steel and some of them in oak. They filter it but they don't fine it, so it's all right for vegans. Lovely herby aromas, bit of flintiness in there, fresh firm palate with a touch of green apple, Bob's your uncle! Lovely with a bit of chicken in tarragon. Wossat? Insensitive? Me??
"Weingut Wageck Pfaffman takes its name from Wilhelm Wageck, who established the winery in 1900. It is now under the control of Wageck's great-grandsons Frank and Thomas Pfaffman, both of whom studied winemaking in Geisenheim and who take charge of white and red wine respectively. Wageck seeks to make dry and pure wines that allow the character and minerality of the soil to shine through, the low yield of the vines and the ripeness of the fruit giving the wines a lower level of acidity and a firm, full body.
The Pfaffmans believe that great wine is created in the vineyard, and that only the best grapes will make the best wines. All grapes are hand-picked and hand-sorted in the winery. Red wines are mash-fermented and pressed after two to four weeks, after which malolactic conversion takes place in oak barrels. White grapes are pressed after up to 24 hours stnding time, temperature-controlled fermentation taking place either in wood or in stainless steel. All Wageck wines are non-certified vegan.
The Sauvignon is herbal on the nose, with a suggestion of flint. The palate is fresh, spritzy and clean, with plenty of green apple fruit flavours."
