German Riesling is perhaps the wine above all others that has been modernised in recent years. It wasn't even particularly long ago that nearly all quality examples would have some sweetness, be labelled with a Prädikat (traditional ripeness level designation) and with a label so classically Teutonic it demands a chorus of "the hills are alive with the smell of bratwurst." Not that we dislike this style, some of the finest wines in the world fall into this category. However, they do look a little anachronistic when you put them side by side with a wine such as Weingut Walldorf.


When you first take in this bottle it strikes you that this is a modern German; no more beer halls, lederhosen or ruthless efficiency, this is a bottle for those who attend secret 24-hour discotechs in Berlin, dressed in Hugo Boss and refer to their mobile as "mein handy!" The wine itself is no less avantgarde; dry as a bone, the wine is piercingly refreshing with classic Riesling characters of lime zest, nectarine, beeswax and a flinty minerality, however significant skin maceration and spontaneous fermentation in German oak gives this wine a mouthfeel and weight that many would not associate with this grape.


The winery Walldorf is located in the heart of Rheinhessen, in Saulheim. Viticulture has been shaping our region and our family for centuries. In 1896 the brothers Walldorf founded today's winery "Walldorf". Much has changed in this long time; Every generation has shaped the winery and the wines in its own way. Since 2012, Max Dexheimer, the fifth generation has managed the family business.
Weingut Walldorf focus on wines made from Riesling, Silvaner, Weissburgunder and Spatburgunder. The vineyards are cultivated and maintained according to biodynamic principles, to create original, characterful and expressive wines.
The Probstey is a beautiful southern slope in Saulheim, perfectly aligned with the sun. The limestone soil is particularly formative on the steepest part. That's what makes Probstey Riesling so distinct.
