After the excitement of defeating the Empire but before the disappointment of what would be imagined by Disney, Admiral Ackbar pursued his dream of producing a wine made from the Monastrell grape, in the Spanish region of Yecla. He wasn’t immediately accepted by the locals because he didn’t speak the language and he had a giant squid where his head should be. However, after some time, the residents of Yecla decided to help the Admiral, and told him he need not graft his vines, as the aphid that attacks ungrafted rootstock, phylloxera, was not prevalent in the region.

Ackbar said, “It’s a Trapio!” But it wasn’t, the vines remained healthy. Now with the vines at an average age of 60 years and still on their own rootstock the grapes are improbably concentrated, resulting in an intense wine with a silky mouthfeel and a palate bursting with black fruit flavours, along with notes of prunes, white pepper, mint, cacao, liquorice and game. It’s a very food friendly wine, we just ask you don’t pair it with octopus, it upsets the Admiral.
