In its raw state, beef has an entirely different character and different rules apply. With all the seasoning, such as capers, parsley and hot pepper sauce, a sparkling white wine can be quite delicious. A crisp, elegant Crémant de Bourgogne would work brilliantly. When pairing this dish with wine consider its delicate texture and match it with a wine which is light in body and will not overpower the carpaccio. Possible matches could include Valpolicella, Chianti and Fleurie.
